After visiting the Molina, the mole is completed and finally we eat!

To the Market for more cooking ingredients


 After getting the mole ingredients pulverized at the Molina, we went to a local market for more ingredients.

The Molina


 We took the ingredients for the mole to the Molina where the grinding machines create the mole paste.  Women arrived, one after the other, to have their mole paste prepared.  Chocolate is also ground in this fashion and you can see the bag of cocoa beans waiting to be ground.

Alma de mi Tierra cooking class with Nora


 Our cooking class was amazing!  The day started off with preparing the dessert, a kahlua gelatin that after chilling was later served with yogurt and sliced kiwi.  Cool and delicious.   

The main event of the day was creating a wonderful Mole Negro which is traditional for Dia de Los Muertos.  It is a time consuming labor of love and so very delicious. 

We started with the peppers, many different types, and prepared them for the trip to the Molina.  This is where the prepared ingredients: peppers, onions, raisins, almonds, sesame seeds, bread and spices are ground into the mole paste.
